Egg and Bacon Baskets

These are really yummy.mmmmmmmmmm

4 bread rolls
6 rashers of bacon (chopped and cooked)
4 eggs
1 tin of sweetcorn kernels
grated tasty cheese

Cut the tops of the bread rolls and dig out the bread inside.
Fill with a bit of the grated cheese first ,then break egg in .
Then add the cooked bacon followed by the sweetcorn.
Top with grated cheese and put the tops back on.
Cook in 180 degree oven for about 30 mins.

This recipe can be added to if you want to make more than 4.

Potato Puff

I pkt of Deb mashed potato
1 cup shredded cheese
1 cup of shredded carrot
1 cup of cooked diced up chicken
3 eggs
half teaspoon salt

Heat oven to 350 degrees. Prepare potatoes as directed on package for 4 servings.
Stir in cheese,chicken,carrots and egg yolks.
Beat egg whites and salt until stiff peaks form then fold into potato mixture.
Pour into 2 qt casserole dish. Place casserole in pan of hot water (1" deep).
Bake uncovered 50 -60 mins or until browned and puffed.

Ham Steaks with orange and apricot sauce

1 cup orange juice(no added sugar)
6 dried apricot halves,chopped
1/4 cup water
2 teas cornflour
2 ham steaks
Pour orange juice into bowl,add the chpped apricots and leave to soak for 4 hours.
Blend water and cornflour to make a paste and stir into orange juice mixture. Bring to the boil,stirring all the time,reduce heat and simmer for 2 mins.
Grill ham steaks for about 8 mins,turning once.
Serve ham steaks on plates with the sauce poured over. Serve with mashed potato and beans.

Tuna Crunch

1 cup of uncooked rice , 1 cup grated cheese, 1 onion , 1 can of chicken soup , 1 can tuna , 1 can sweetcorn (optional).

Boil the rice until cooked. Place in large dish with chicken soup,chopped onion,cheese and tuna and mix together. Put into casserole dish and sprinkle crushed potato chips or breadcrumbs on top. Put into 180 degree oven and cook 30-40 mins. Bon Appetit.
